Thanksgiving Stir Fry?

I saw this recipe for Cranberry-Turkey stir fry on TV! Something different to try!

Ingredients

  • 2 garlic cloves, minced
  • 1 tablespoon canola oil
  • 2 cups julienned carrots
  • 2 cups uncooked turkey breast strips
  • 2 cups julienned zucchini
  • 1 cup canned bean sprouts
  • 1 can (8 ounces) jellied cranberry sauce
  • 1/3 cup apple juice
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup cider vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup cold water
  • 4 cups hot cooked rice

Directions

  • In a nonstick skillet or wok, stir-fry garlic in oil for 30 seconds. Add carrots; stir-fry for 2 minutes. Add turkey, zucchini and bean sprouts; stir-fry 3 minutes longer. Combine cranberry sauce, apple juice, soy sauce and vinegar; stir into skillet. Bring to a boil.
  • Combine cornstarch and cold water until smooth; gradually stir into skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened and bubbly and turkey juices run clear. Serve over rice. Yield: 4 servings.

Pictures from my Mt. Whitney Trip

Hey Y'all

This last weekend (Oct 16 and 17) a group of coworkers and friends hiked Mt. Whitney attempting to summit the highest peak in the continental United States.
(See wikipedia page for Whitney's stats http://en.wikipedia.org/wiki/Mount_Whitney) Earlier in the week California was pounded with some early winter storms and the Sierra Neveda mountains got an earlier start building its winter snow pack. The snow the storm left made for slow hiking conditions most of the trip. Long story short, we got a late start for the summit Saturday because we waited for the slower member of our group that didn't make it to camp Friday night to catch up. They never caught up, and later we found out they didn't try. We made it to trail crest (13,600ft elev) at about noon. After some lunch we decided not to attempt the summit because we were unsure of conditions along the last 2 miles of the trail and hiking thus far was much slow than expected. We would be fighting daylight if we made an attempt for the summit and thoughts of pizza and beer at the pizza factory helped reinforce our decision to turn around. THE END.

Hi Everybody

Hey everyone quick update, I now have a mailing address. It's P.O. Box 5350 Dillon, CO 80435. I also have gotten my Colorado license, so I'm on my way to being a resident. I thought the license was a joke when I first saw it, it looked like a fake compared to my Iowa ID. No dice on a job yet, although I just found a promising forestry and tree care job on craigs list asking for someone with skid loader, chainsaw, and trailer backing experience. Hopefully they call back soon, wish me luck!
P.S. Eric I demand you post the picture.

Eric is proud of his family!

I don't know if it's the techy nerd in me, but it brings tears to my eyes to see Dee and Dian posting on our family blog!

Dian is an Iowa resident

As of September 1, Dian no longer owns a homestead in Florida. I am now a resident of Iowa. Jerry went to Florida and helped me load the U-Haul Truck and we drove it to Iowa. We stayed with his nephew in Georgia one night. The second night we stayed with his daughter Sarah and her husband and three children. We pulled my car behind the truck. Now my belongings are in storage and I am driving my car too fast because I got a speeding ticket today while coming home from Sigornery where I am working as a consulting dietitian at a nursing home. This weekend I am spending the holiday in Keokuk with Jerry and his children and grandchildren.
That is my story to date!

Grandma is a STAR

Grandma Doris has been selected one of four women who will be named Iowa Master Farm Homemakers next Friday in Des Moines. Grandpa Don was named a Master Farmer 50 years ago. Doug was named a Master Farmer about 25 years ago. So, it is appropriate that Grandma is named an Iowa Master Farm Homemaker since she was the woman behind the men.
Dee, Lynne and Dian will accompany her next Thursday to Des Moines for a dinner in the evening and the awards luncheon on Friday. We will report after Friday.

Two weeks ago the land east of the road was named a Century Farm as it has been in the family over 100 years. This land was originally owned by John August who had 4 children to whom he gave each 100 acres. The land was given to the daughter who married Christian Johnson. Then Elmer and Edith Johnson and then Don and Doris Johnson. Doug and Lynne's homestead was named a Century Farm in 1988.

Cody and his girlfriend, Kim, are going camping at Glacier National Park
this weekend. So... we met out in the middle of nowhere and ate lunch.
